Omelette Flambée

Ingredients

• four tablespoonfuls of rum
• sprinkle well with sugar

Method

1. 1

   Shake the pan until the eggs begin to set.

   Fold over while the inside is still creamy and serve.

3. 3

   At the table, pour over the omelette the rum, sprinkle with sugar, and light the liquor that runs down into the plate, basting the omelette with it until the flame is extinguished.
