Neapolitan Loaf

Ingredients

• 1 Cc. Carrots, grated cooked
• 1 Tb. Fat
• 2 Tb. Flour
• 4 C. Milk
• 1 C. Spinach, cooked
• 1 C. Rice, cooked
• + C. chopped Nuts
• F Eggs
• aes Tb. Seasonings
• Tb. Soft Butter

Method

   Make thick white sauce of fat, flour, and milk.

   Combine carrots and spinach with half of beaten egg yolks each.

   Add white sauce and butter to each mixture.

4. 4

   Fold stiffly beaten egg whites into rice.

   Grease bread pan, layer carrot mix, nuts, spinach, nuts, and rice.

   Bake at 325°F for 1 hour or until firm.
