mutton stew by adding carrots — and turnips to taste. Liver and Bacon 4 Ib. liver. 2 tablespoonsful seasoned flour. 6-8 rashers of fat bacon. 14-2 gills of stock. Method.—Prepare the liver by removing the skin and cutting inslices about } inch thick, then soaking in warm water (salted) for about 15 minutes. Cut the rind off the bacon. Drain and dry the liver and coat it with seasoned flour. Fry the bacon very lightly and put it on a hot dish, which should have been put on a sauce- pan of steaming water and covered to keep thoroughly hot. Put the bacon rind in the frying-pan and a little extra fat if required, and cook the liver gently, turning once. The time will vary according to the thickness of the slices and the taste of the cook, but about 10 minutes should be sufficient. When cooked put on the dish with the bacon on top. Mix the remainder of the seasoned flour with the fat in the frying-pan, cook for a few minutes before adding stock or water to make the gravy. Stir until it boils and boil for 3 minutes to cook the flour. Strain the gravy round the liver and serve at once. MEAT 31 Stuffed Liver Number 6. Time 40-45 minutes. Shelf 3rd. 3 Ib. liver. + pint of stock. 1 small onion. Veal stuffing (see recipe, p. 40). 6 rashers of bacon. Method.—Prepare the liver and cut into 6 slices (about 3 inch thick) and season with pepper and salt. Chop the onion very finely and spread it on the bottom of a greased fireproof dish. Put the liver in the dish and pour the stock round it. Put a thin layer of stuffing on each slice and cover with a rasher of bacon.
