Mother R.'s Corn Meal Muffins

Ingredients

• One-half cup of sugar
• one-half cup of butter
• one scant cup of sweet milk
• two cups of flour
• one cup of corn meal
• two eggs
• one teaspoonful of salt
• two teaspoonfuls of baking powder

Method

1. 1

   Mix meal, sugar, salt, and butter at night.

   Scald it and allow to swell until morning.

3. 3

   Next morning sift the baking powder into the flour, and add it to the corn-meal mixture.

   Now add the beaten yolks and thin it with the sweet milk.

5. 5

   Just before baking, add the beaten whites.
