Mock Turtle Soup

Ingredients

• Half a Calf’s Head
• 2 lb. Shin of Beef
• 1 Onion
• 1 small Carrot
• 24 Peppercorns
• 6 Cloves
• 1 Bay Leaf
• 1 blade Mace
• 1 sprig Parsley
• 1 sprig Marjoram
• and a little Basil

Method

   Cut up beef and clean head thoroughly.

   Remove brains and tongue, put in salt and water.

   Boil head, beef, and bones in 3 quarts water with salt for 6 hours.

   Remove fat, add vegetables to refresh flavor, thicken with cornflour mixed with water and ketchup, add pieces of head, lemon juice, and serve with cayenne and toast.
