Mock Turtle Soup

Ingredients

• one pint of black beans
• two quarts of cold water
• one onion
• two teaspoons salt
• one saltspoon pepper
• one-quarter saltspoon of cayenne
• one saltspoon mustard

Method

   Soak beans overnight, boil in cold water with celery, meat, onion, salt, pepper, cayenne, and mustard until soft.

   Rub through a strainer, return to boil, thicken with flour and butter, season to taste, and serve with croutons.
