MINCE MEAT 1 pound pork souse meat 24 cups sugar 3 cups raisins 1 teaspoon each nutmeg, Y2 teaspoon salt cinnamon and allspice 6 apples Pare apples, dice and cook until tender. Add other ingredients and simmer a few minutes. Makes 3 pies. ARTA BARKER (Mrs. J. C.) 130 PIES CHOCOLATE PIE 1 tablespoon butter 1 cup sugar 4 tablespoons cocoa 14 teaspoon salt 3 tablespoons cornstarch 1 teaspoon vanilla 2 cups milk 2 egg yolks Melt cocoa and butter in top of double boiler while scalding milk. Mix sugar, cornstarch and salt and stir into milk then add the mixture to cocoa mixture and blend well. Cook until thick. Remove from stove and add two weil beaten egg yolks. Return to double boiler and cook two more minutes. Add vanilla, cook, and pour into baked pie shell. Top with meringue and brown in medium oven (350°). Meringue 2 egg whites 2 tablespoons sugar Beat egg whites until almost stiff, then gradually add sugar and beat until stands in peaks. (This is more complicated than mixes, but oh! the difference is worth your time! ) Louise L. Mix all ingredients and let stand over night. Cook until fruit is done, seal while hot. Improves with age. This recipe is an old one and is said to have been used by the Curtis family of Virginia.
