Mexican Eggs

Ingredients

• 3 eggs
• 1 tsp salt
• 1 small onion
• Va tsp paprika
• y2 bell pepper
• % tsp soda
• 3 tomatoes
• 1 tbsp flour
• 1 tbsp butter

Method

1. 1

   Fry onions, chopped, in butter for 5 minutes.

   Add tomatoes, salt, pepper and paprika.

   When hot add soda and cook 5 minutes more.

   Five minutes before serving add eggs well beaten, and flour mixed with a little cold water.

   Stir until thick and serve at once on toast.
