Meat Loaf (Moist)

Ingredients

• 1 1b. chopped chuck
• 1/8 1b. salt pork
• 1 small onion chopped fine
• 5c. milk
• Add 1 egg and mix well
• 3c. rolled Ritz crackers
• + tsp. powdered sage

Method

   Shape the mixture into a loaf and roll in additional Ritz cracker crumbs.

   Bake on a rack in a 350° oven for 45 minutes, basting occasionally with very little hot water and juices.

   Alternatively, cook in a Dutch oven after browning on all sides in fat, adding a small amount of water to prevent burning.

   Cook for 45-60 minutes.
