Meat Croquettes

Ingredients

• One pound of cold meat chopped fine
• half a pound of bread crumbs
• half a pound of butter
• five eggs
• three teaspoonfuls of chopped parsley
• one small onion minced
• half a teaspoonful of nutmeg
• pepper and salt

Method

   Pour boiling water over bread crumbs until smooth.

   Mix in egg yolks and other ingredients.

   Form into croquettes, dip in beaten egg and bread crumbs, then fry in boiling lard until light brown.
