Marengo Chicken. One young chicken, 1 tablespoon of olive oil, 2 tablespoons of chopped celery, 1 teaspoon of chopped parsley, 1 teaspoon of minced onion, juice of % lemon, 1 teaspoon of salt, a dash of cayenne pep- per. Disjoint chicken and put in saucepan with enough cold water to cover, and the salt. Stew until done, then add rest of ingredients. If gravy is too thin thicken with 1 teaspoon flour
