Mackerel with Black Butter

Ingredients

• One mackerel
• One tablespoonful of common vinegar
• Two ounces of butter
• Pepper and salt
• Parsley

Method

   Split the mackerel open at the back, season with pepper and salt, and butter it all over.

   Lay it on a gridiron over a moderate fire, turning it when half done for about a quarter of an hour.

   Place it on a dish without a napkin.

   Heat the butter in a stewpan until it becomes black, add parsley and fry till crisp.

   Pour over the fish, add vinegar, boil for half a minute, season, and pour over the fish again.

   Place in the oven for five minutes and serve very hot.
