Mackerel, To Broil or Grill (Maquereaux Grilles)

Ingredients

• 2 mackerel
• 1 table-sp. salad oil
• 1 table-sp. lemon juice
• 1 shallot finely chopped
• 1 tea-sp. chopped parsley
• Pepper and salt

Method

   Clean the fish, cutting off the heads and fins.

   Split them in two and remove the bones.

   Soak the pieces of mackerel in the marinade for 1 hour, turning occasionally.

   Place them on a greased broiler, cook about 10 minutes on the split side, and then 3 to 4 minutes on the skin side.

   Serve garnished with watercress or parsley and lemon, with maitre d’hotel butter or any other savoury butter separately.
