r 1 heaped teaspoonful baking 4 ozs. sultanas. 3 powder. ~ Pinch of salt. 4 ozs. Currants. Meihod—Cream the butter and sugar in a warm basin till very soft. Beat in the eggs one at a time, adding a little flour with CAKES AND BREAD 61 the second. Mix in the fruit, and lastly sift in the flour, baking powder and salt. Mix lightly. Put into a greased cake tin (6-7 inches across) and bake. Gingerbread Number 3. Time 13 hours. Shelf ath. 12 ozs. flour. 1 flat teaspoonful bicarbonate 3 Ib. treacle or golden syrup. of soda. 3 Ib. lard. 2 eggs. + lb. brown sugar. 4 tablespoonsful milk. 2 teaspoonsful ginger. Method.—Melt together the sugar, lard and treacle. Sift the flour, soda and ginger into a basin. Add the melted treacle, etc., mixed with the beaten eggs. Mix to a batter consistency, adding milk if necessary. Bake in a greased meat tin, size Io inches by 8 inches. Gingerbread (plain) Heat at Number 5. Cook at Number 4. Time 2} hours. Shelf ath. 4 lb. flour. 1 gills milk. 2 ozs. lard. 1 flat teaspoonful bicarbonate + lb. brown sugar. of soda. 4 Ib. golden syrup. 1 heaped teaspoonful ginger. Method.—Sift together the flour, ginger and soda. Rub in the lard. Add the sugar, mix to a thick batter with the milk and golden syrup, beat well. Put into a greased 7-inch or 8-inch cake tin, having a lining of greased paper in the bottom of the tin, and bake. Lunch Cake Heat at Number 5. Cook at Number 4. Time 12 hours.
