Lobster Toast

Ingredients

• a large lobster
• two or three tablespoonfuls of cream
• one ounce of butter
• a boned, washed and chopped anchovy
• salt and pepper to taste
• two or three tablespoonfuls of washed and chopped watercress
• some slices of bread

Method

   Pick lobster meat, mix with cream and butter, add anchovy, salt, pepper, and watercress.

   Toast bread, spread lobster mixture, sprinkle with breadcrumbs, and bake in a brisk oven for a few minutes.

   Serve garnished with watercress.

Lobster Toast. « Pick all the meat from the shell of a large lobster and chop it fine ; work two or three tablespoonfuls of cream into one ounce of butter, then mix with it the chopped lobster, adding a boned, washed and chopped anchovy, and salt and pepper to taste.
