Lima Bean Salad

Ingredients

• 1 can lima beans
• 2 hard-cooked eggs
• 1 tablespoon finely chopped chives
• French dressing
• or Cream Dressing

Method

   Cook beans in boiling salted water until tender; drain.

   If using canned beans, rinse in cold water.

   Cover beans with French Dressing and let stand for one hour.

   Drain and sprinkle with chives.

   Mix with Cream Dressing and arrange in lettuce nests.

   Garnish with eggs cut in quarters, dipped in French Dressing and chives.
