Lettuce Omelet Salad a la Aurorian

Ingredients

• Three eggs
• one head of lettuce
• one tablespoon of butter
• three spoons of milk
• four spoons of rich cream

Method

1. 1

   Mix yolks and whites of eggs, add milk and cream.

   Melt butter in an omelet pan, add mixture, and cook.

3. 3

   When settling, sprinkle chopped lettuce, fold omelet, and turn out on a platter.

   Decorate with shredded lettuce and garnish with a poached egg and truffles.

5. 5

   Serve with Aurorian sauce.
