Lemon Delicacy

Ingredients

• 20 eggs
• 144 cups flour
• 10 cups milk
• 9 lemons, juice and grated rind
• 1% cups butter
• 7 cups sugar

Method

   Cream butter and sugar.

   Add egg yolks, cream well and add flour, lemon juice and grated rind.

   Add milk and fold in beaten egg whites.

   Put in shallow pan and place in pan of hot water.

   Bake in moderate oven (350°) for 45 minutes.

   A delicate crust forms on top and the pudding will form its own sauce.
