Lemon Curd

Ingredients

• 3 cups sugar
• 6 eggs
• 4 ounces butter
• 4 lemons

Method

   Put butter in top of double boiler.

   When melted, add sugar, then strained juice and rind of lemons.

   Beat eggs well and add to the mixture.

   Stir until thick as honey.

   This keeps well if tightly covered.
