Lemon Cakes

Ingredients

• 1 J oz. biscuit crumbs
• 1 oz. rice flour
• 1 oz. flour
• J lb. butter
• 3 oz. castor sugar
• Rind of 1 lemon
• 3 eggs
• 2 oz. candied lemon peel
• Lemon glace icing.

Method

   Cream the butter, add the sugar and grated lemon rind.

   Then add the egg and strained lemon juice.

   Mix baking powder with flour and stir lightly into the other ingredients.

   Use milk if necessary to make a stiff dough.

   Turn onto a floured board, divide into pieces, roll each into the shape of an 'S', and bake on a greased tin in a moderate oven.
