Larded Liver

Ingredients

• Take a fresh lamb’s liver
• chopped onions
• carrots
• slices of fat bacon
• salt
• pepper
• a bunch of sweet herbs
• 2 cloves
• some good brown stock

Method

   Lard the liver carefully with a small larding needle in close rows.

   Place in a deep baking dish with onions, carrots, bacon, salt, pepper, herbs, and cloves.

   Pour over brown stock.

   Cover with buttered paper and cook in a moderate oven for 40-50 minutes, removing the paper and dredging lightly with flour 8 minutes before finishing.

   Place on a hot dish.
