Lady Fingers

Ingredients

• One half pound flour
• y, pound powdered sugar
• 9 eggs
• the grated rind of 1 lemon

Method

   Stir the yolks with half the sugar for 10 minutes, beat the whites to a stiff froth.

   Gradually add the remaining sugar while beating, then fold in the yolks and lemon.

   Carefully add the sifted flour.

   Pipe the mixture onto brown paper in finger shapes, dust with powdered sugar, and bake in a quick oven.
