Kromeskies of Sweetbread (Cromesquis de Ris de Veau)

Ingredients

• 6 oz. cooked sweet-bread
• 2 oz. cooked ham.
• 1 or 2 truffles.
• 1 tea-sp. chopped parsley
• Seasoning.
• 1 oz. butter.
• 1 oz. flour.
• 1 gill stock.
• Caul.
• Frying batter.

Method

   Cut sweetbread, ham, and truffles into small pieces.

   Melt butter, add flour, then stock, stirring until it pulls away from the sides.

   Remove from heat, add sweetbread mixture, and season.

   Prepare caul and flatten it out.
