Kidney and Tomato Soup

Ingredients

• 1 Ox Kidney
• 1 Butter
• 1 tablespoonful of Flour
• 1 sm^l Carrot
• 2 pints Water
• 1 tm Tomatoes
• 1 teaspoonful Salt
• i teaspoonful Pepper
• Turnip
• Onion
• 1 pinch Sugar
• 1 sciugozo liGmon Juic©

Method

   Melt butter in pan, cut kidney into small square pieces, keeping back all fat.

   Mix flour, pepper, and salt together, toss kidney in it.

   Put kidney in pan with melted butter and stir till nicely browned.

   Pour on water, let it simmer for 1.5 or 2 hours.

   Skim frequently and stir often.

   Cook tomatoes with other vegetables, salt, sugar, and lemon juice till tender.

   Rub through a sieve, add to kidney, and stir till boiling.
