Italian Soup (Soupe Italienne)

Ingredients

• | lb. haricot beans
• 3 pts. water
• 1 table-sp. salad oil or dripping
• Salt, pepper
• 2 oz. rice, macaroni, or tapioca
• 2 cupfuls fresh vegetables
• Grated cheese

Method

   Wash the beans and soak them overnight in cold water.

   Put them in a saucepan with water, pepper, salt, and oil.

   Bring to a boil and add rice, tapioca, or macaroni.

   Simmer for at least 3 hours, adding more water if it becomes too thick.

   Add fresh vegetables prepared and cut in small pieces, allowing sufficient time to cook them thoroughly.

   Serve grated cheese on a separate dish.
