Herring with Mustard Sauce

Ingredients

• J herrings
• 8 potatoes
• | oz. flour
• oz. fat
• $ pint milk and water or fish stock
• 1 teaspoonful made mustard
• £ oz. grated cheese

Method

   Prepare a greased dish or scallop shells.

   Steam and peel the potatoes; break them up.

   Boil the herrings for 10 minutes.

   Make the mustard sauce like white sauce, adding the mustard when cooked.

   Layer all ingredients in the dish, leaving half the cheese to sprinkle on top.

   Bake until thoroughly hot and browned.
