Hearty Beef Salad

Ingredients

• 2 cups cooked diced beef
• 1/2 cup French dressing
• 1/2 cup diced cooked potatoes
• 1/2 cup cooked green beans
• 1/2 cup coarsely grated carrots
• 1/4 cup chopped sweet pickle
• 2 diced hard-cooked eggs
• 1 cup mayonnaise
• 4 to 6 lettuce cups

Method

   Pour French dressing over beef cubes and marinate for 1 hour in refrigerator.

   Chill potatoes and beans.

   Combine beef, potatoes, beans, carrots, pickle and egg.

   Moisten with mayonnaise and mix lightly.

   Serve in lettuce cups.
