Hashed Brown Potatoes

Ingredients

• sufficient cold boiled potatoes to measure 1 pint
• 1 scant teaspoonful of salt
• 1/2 teaspoonful of pepper
• 1 large tablespoonful of butter

Method

   Chop potatoes finely and season with salt and pepper.

   Heat butter in a frying pan, add potatoes, and press down.

   Cook slowly without stirring until golden brown, then roll over carefully and serve on a heated platter with chopped parsley.
