Harvard Beets

Ingredients

• 2 cups beets, diced
• 1/3 cup sugar
• 1 1/2 T. flour
• 2 T. butter
• 1/4 cup vinegar
• 1/4 cup beet juice
• 1/2 t. salt

Method

   Mix sugar and flour and add to melted butter.

   Add vinegar, beet juice, and salt; boil, stirring until thick and smooth.

   Add diced beets and let stand for at least 30 minutes.

   Just before serving, heat to boiling.
