Haricot of Ox Tails

Ingredients

• Cut three ox tails in four-inch pieces
• one half cup carrot
• one half cup onion
• four tablespoons butter
• four tablespoons flour
• four cups water or stock

Method

   Cook ox tails with carrot, onion, and butter for ten minutes; add flour and water or stock, cook for one hour; season with salt and pepper.

   Serve vegetables in center and ox tails around edge, garnish with potato balls and parsley.
