Ham Casserole

Ingredients

• 14 lb. ham
• 14 lb. potatoes
• 2 onions
• £ pint stock
• 402. brown sugar
• 4 lb. apples
• 1 dessertspoonful tomato catsup
• 4 peppercorns
• 1 teaspoonful chopped parsley

Method

   Soak the ham in water overnight, cut into small pieces and place in a casserole.

   Cover with chopped onion, sugar, and apples cut in slices, and place the potatoes on top.

   Add the stock, tomato catsup and peppercorns (in muslin bag), and bake slowly in a moderate oven at 350° F. for 1.5-2 hours.

   Remove the lid for the last hour of baking in order to brown the potatoes.

   Remove the peppercorns and sprinkle with parsley before serving.
