Haddock, Baked. — Empty and wash the fish, scahng it carefully ; let it lie in vinegar for fifteen minutes, then dry it, dredge with flour, cover with beaten egg, then with breadcrumbs, and lay in a greased baking-dish. Pour melted butter over it, and bake about twenty minutes. The gravy which comes from the fish may be seasoned and sent to table with it. Garnish with cut lemons
