Gurnets with Potatoes

Ingredients

• 3 or 4 small gurnets
• 3 or 4 potatoes
• A few slices bacon fat
• Pepper
• Salt
• A little flour
• Lemon juice
• 1 dessert-sp. chopped parsley

Method

   Clean and wash the fish, cut off heads and fins, score sides, season with pepper, salt, and lemon juice.

   Let sit for half an hour.

   Parboil potatoes for 10 minutes, cut into quarters.

   In a baking dish, lay slices of bacon, coat fish with flour, place on top, add bacon on each.

   Arrange potatoes around fish, cover with greased paper, and bake until ready, turning potatoes once.
