Green Pea Soup, St. Germain Soup (Potage St. Germain)

Ingredients

• 3 gills shelled green peas
• A handful of pea shells
• A few parsley stalks
• A sprig of mint
• 3 spring onions
• 1 lump of sugar
• 2 pts. second white stock
• 1 lettuce
• 1 gill of thin cream
• Salt and pepper

Method

   Wash and cut pea shells, shred lettuce, and slice onions.

   Boil stock, add vegetables, parsley, mint, sugar, and 2 gills of peas (reserve 1 gill for garnish).

   Boil until peas are tender, rub through a sieve, return to heat, add cream and whole peas, and season.

   Bring to boil again and serve with croutons.
