German 'Lebkucken' Cookies

Ingredients

• Beat 4 whole eggs
• 2 cups of sugar
• 4 figs
• rind of 1 lemon
• 1/2 lb. each of citron
• 1/2 lb. each of lemon peel
• 1 tablespoon of cinnamon
• 1 tablespoon of cocoa
• 2 cups of flour
• 1 saltspoon of powdered ammonia

Method

1. 1

   Beat 4 whole eggs with 2 cups of sugar for about 0.5 hr.

   Add figs, lemon rind, citron, lemon peel, cinnamon, cocoa, flour, and powdered ammonia.

   Roll out and shape into 3-inch squares.

   Bake in a moderate oven.
