Game Soup

Ingredients

• the remains of one or two small birds
• 5 onion
• 2 oz. dripping
• 2 oz. oatmeal
• 1 quart Plasmon stock
• 6-8 preserved mushrooms
• salt and pepper

Method

   Remove meat from birds, chop carcass, and fry with dripping and onions.

   Add oatmeal and fry until brown.

   Gradually moisten with stock, cook for half an hour, pass through a sieve, reheat, add mushrooms and reserved meat, season, and serve with croutons.
