Fried Brook Trout

Ingredients

• a dozen good-sized trout
• six slices of salt pork
• a little salt
• half flour and half Indian meal

Method

   Split the trout nearly to the tail, wash, drain, wipe, and dip in a mixture of flour and Indian meal with a little salt.

   Fry salt pork until brown, then fry the trout until golden brown.
