Fried Bananas

Ingredients

• four or five ripe bananas
• the yolk of an egg
• a little milk
• dredge with flour
• melted butter

Method

   Peel and slice the bananas lengthways or divide each into two.

   Brush them with egg yolk mixed with milk, dredge with flour, and dip in melted butter.

   Butter the inside of a large 'Express' paper-bag, put in the bananas, fold the end of the bag, and fasten with wire clips.

   Place the bag on a wire grid in a fairly hot oven and cook for about 10 minutes.

   Serve hot, sprinkled with castor sugar.
