Fricassee of Calf’s Feet

Ingredients

• 1 set of cooked calf’s feet
• 3 gills white sauce
• 2 or 3 oz. ham or tongue
• 1 dessert - sp. chopped parsley
• Seasoning
• Croutons of fried bread

Method

   Remove gelatinous flesh from the cooked calf’s feet and cut into small pieces.

   Prepare white sauce with seasoned milk or stock.

   Warm the meat in the sauce, season with pepper, salt, and lemon juice, and add finely chopped parsley.

   Serve on a hot dish garnished with croutons.
