French Beans a la Poulette

Ingredients

• 1 lb. French beans
• 1 } oz. butter
• 1 dessert-sp. flour
• 1 tea-cupful milk
• 1 yolk of egg
• A squeeze of lemon juice

Method

   Prepare and cook the beans as in the last recipe.

   Drain before they are quite ready.

   Melt butter, add beans, sprinkle in flour, and toss for a few minutes.

   Pour over milk and simmer until cooked.

   Just before serving, add beaten yolk with water and lemon juice.
