French Beans a la Maitre d'Hotel

Ingredients

• 1 lb. French beans
• 1 tea-sp. lemon juice
• 1 or 2 oz. butter
• 1 tea-sp. chopped parsley
• Seasoning

Method

   Choose young fresh beans; wash them well in cold water.

   If very young, cut off the heads and tails only.

   If older, remove the string and cut into thin strips.

   Boil in salted water for 20 to 30 minutes.

   Drain and return to the saucepan with melted butter, seasoning, and lemon juice.

   Toss over the fire until mixed.
