Fish Loaf

Ingredients

• 2 c. cooked fish, flaked
• 1 c. soft bread crumbs
• K T. salt
• 34 T. paprika
• ^ T. grated onion
• 1 T. lemon juice
• 2 eggs
• }4 c. milk
• 1 tb. finely chopped parsley

Method

1. 1

   Mix all together; more milk may be needed if fish is dry.

   Turn into buttered mould, cover.

   Oven poach or steam until firm in centre — about 1 hour.

   Serve hot with Drawn Butter or Hollandaise Sauce, or serve cold on lettuce.
