Fish Entree

Ingredients

• Some fillets of Sole
• 1 oz. Butter
• 1 oz. Flour
• 1 tin Button Mushrooms
• squeeze of Lemon
• Salt
• Pepper
• yolk of Egg

Method

   Melt butter and flour; add fish stock or milk, mushrooms, and yolk of egg.

   Spread mixture over soles, double over, lay on a buttered tin, cover with bread crumbs, and bake for 6 minutes.

   Serve with remaining mixture piled in the center of a hot dish, surrounded by pieces of fish, and pour white sauce around.
