Fish Croquettes

Ingredients

• Mix together 1 pint of cold flaked fish
• and 1 pint of hot mashed potatoes
• and 1 tablespoonful of butter
• add 1/2 cupful of milk
• 1 well beaten egg
• 1/2 teaspoonful of pepper
• 1 teaspoonful of salt
• 1/2 teaspoonful chopped parsley

Method

   Mix fish, mashed potatoes, and butter.

   Add milk, beaten egg, pepper, salt, and parsley.

   Cool, form into balls, roll in egg and crumbs, and fry in deep hot fat.
