Fillets of Sturgeon with Sauce

Ingredients

• 2 lbs. sturgeon
• Seasoning
• Lemon juice
• Warm water
• A bunch of herbs
• Caper or tomato sauce

Method

   Clean sturgeon, remove skin and bone, cut into fillets.

   Rub with lemon juice, season, and place in a greased dish.

   Cover with warm water or white wine, add herbs, and cover with greased paper.

   Cook in a moderate oven until tender, prepare sauce separately, and serve fillets warm.
