Escaloped Codfish

Ingredients

• layers of flaked and freshened fish
• boiled rice or macaroni
• salt
• pepper
• plenty of butter
• enough milk to cover
• a sprinkling of bread crumbs
• several bits of butter on top

Method

   In a buttered baking pan, layer flaked fish and rice or macaroni, seasoning each layer.

   Pour milk over to cover, sprinkle with bread crumbs and dot with butter.

   Bake slowly until browned.
