Empress Rice

Ingredients

• 3oz. of rice
• a pint of single cream
• 3oz. of caster sugar
• the finely pared rind of a lemon

Method

   Cook rice in cold water, rinse, then boil with cream, sugar, and lemon rind until tender.

   Remove lemon peel, cool, and mix in whipped cream.

   Pack in a mould and freeze for 2-3 hours.

   Serve with fruit compote or whipped cream.
