Make the croustade case with two ounces of flour, the yolk of an egg and a pinch of salt worked into a smooth paste with cold water, roll out these, and then stamp out as many 14 TEMPTING DISHES. rounds as possible with a good-sized plain cutter, gather up the rough pieces and make them into a ball.
