Ingredients

• the fish
• a dressing made of bread or cracker crumbs
• a little butter
• cubes of salt pork fried brown
• a little minced onion
• pepper, salt and sage to taste

Method

   Clean and wash the fish, wipe dry, sprinkle inside with salt, and fill with dressing.

   Skewer or sew up the fish, place in a baking pan with water, sprinkle with salt and flour, dot with butter, and bake slowly until done.
