Curried Rabbit

Ingredients

• 2 large onions
• 1 carrot, sliced
• 6 pepper corns
• 1 tahlesp curry powder
• 1 tablesp curry paste

Method

   Wash and joint the rabbit, dredge with flour.

   Simmer trimmings and scraps with onions, carrot, herbs, peppercorns, and curry powder in cold water for 1.5 hours, then strain.

   Fry minced onion in drippings, add curry paste, then stock, simmer.

   Fry rabbit joints, add to curry sauce, simmer for 1 hour.

   Before serving, add lemon juice, pepper, and salt to taste.
